Happy New Year's Eve Everyone


You know it's been a bad year when the universe is giving 2020 the finger.  For those of you who want to know, yes, this is real. It's not photoshopped. This is a Bok Globule. It is a dark nebulae cloud of dense cosmic dust and gas from which stars form.

Hello, my dear readers and friends. I hope this new year will make things better but we all know that won't be the case. I'm fine. I just took the two weeks off because the cold and bad weather was taking their toll on me. It's raining now and will continue to storm all day long. The rain makes me energetic but I still feel the pain. I need to do so much before the year ends. 

Poor Lucy is walking around upset because of the rain and thunder. She hates both. Right now she's sitting with David in the TV room. She knows he will protect her so she sleeps under his chair while he Skypes with friends in Canada and the UK. Lucy just sauntered into the living room looking for me - and there she goes. We just had a tiny rumble of thunder so she ran for David. Poor babygirl. She wants to be with mommy but daddy is her protection. She will be doing this all day, I'm afraid.

Well, I have a house to tidy up here and there so all y'all have a fun time if you can tonight. Stay safe, wear a mask, and have a magical day.

Lucy Hates Cameras

 It's been really cold in the mornings. 
Something like around the low 30's.


Lucy hates the cold and has been 
hibernating under blankets when she can find them.
When the blankets are nowhere to be found she watches 
the squirrels from the living room window.


There are blankets on the couch but I have the camera at the ready and she refuses to have her picture taken. Very camera shy.


I have to sneak a snap or two when she's not looking.

 

The only time she doesn't mind the camera is when she's outside playing. 
She's more interested in finding squirrels and exploring 
all the new smells than posing for the camera. 
Silly puppy.

Cowboy Cookies Recipe and How To Make Them Better

 Some of you were asking about the cowboy cookies recipe. Well, I got it from here:

You can follow the recipe or play with it. I tinkered with it until I liked what it tasted like. For instance, I added 1 teaspoon nutmeg and although it doesn't ask you to do it, I sifted the flour, salt, baking soda, baking powder, and cinnamon and then added it to the butter/sugar mixture little by little. Sifting the flour mixture cut down on the lumps from the baking soda and baking powder and it mixed the dry ingredients before dumping it into the wet ingredients and it made the cookie feel lighter after baking. 

I added 1 extra cup of chopped pecans instead of 2 cups to make it 3 cups. 

I added 2 cups of raisins (believe me it makes it so fucking much better).

I cut the rolled oats down to 2 cups instead of 3 cups. I thought that was just too much rolled oats and that made a really dried out cookie.

I mix the chocolate chips, rolled oats, coconut (please use flaked), pecans, and raisins in a humungous, and I do mean a really big bowl, and then I add the cookie batter mixture to it. Do not attempt to mix this all with a stand or hand mixer or a spoon. It won't work. I went out to Walmart and bought a small box of Nitrile powder-free gloves. I wear them when mixing large batches of cookie mix. I found that the cookie batter won't stick to the gloves like it does to your hands. Anywho I put them on and mix up the dry goodies with the batter and use a large or medium-sized serving spoon or ice cream scoop, it all depends on how big you want these things to be, to scoop out a nice mixed portion that I roll it into a ball and then mash (yes I know the recipe doesn't call for it but it's better this way) the ball with my gloved hand. You want it to be about half-inch thick and about 2-1/2 to 3 inches in diameter. Place them on a nonstick cookie sheet, 6 or 9 to a sheet. These buggers will spread a little. I usually bake them at 350F for 12 to 15 minutes shifting the cookie sheets at the 6 or 7-minute mark. This is important, only bake the cookies until the edges are lightly browned. That's the cue to take them out of the oven. Don't worry about it if the centers look raw, believe me, they aren't raw.

Another important note, Let Them Cool on the cookie sheets for about 2 to 3 minutes or they will crumble when you take them off with a spatula. Place waxed paper on your dining room or a large work table for maximum cookie cooling room. Store them with waxed paper in between layers so the cookies don't stick to each other, in a plastic container with a good sealing top. 

I can say this for sure, you will not be able to keep them long. They tend to disappear before you know it. I made 2 dozen for my husband and myself and they were gone before three days were over. I think I had six during the whole three days. David loves cowboy cookies because they have everything a cookie lover loves.

You should be able to get about 2 to 3 dozen cookies depending on how big you want them.

I Think I'll Stay a While


Thank you all for the well wishes. I have decided to stay. Yeah, someone has to keep you people in line. Who else can whip y'all into a slobbering frenzy? Screw lupus. I'll push through it and when I can't, I'll just take a few days off until I feel better. I will be making a change though I'll be posting later than I usually do because it's kinda hard getting up at the crack of dawn. So y'all will have to keep an eye out.

This past weekend we ate our fill of Thanksgiving ham and stuff, not stuffing, just stuff. Saturday I made homemade chicken soup and David's beloved tortilla soup. I like tortilla soup but DAYUM, not every day. I thought of hooking him up to a tortilla soup IV but then his arm would be making strange slurping sounds at bedtime. Anywho, I made some raisin cinnamon bread and regular bread too. Also my favorite and every diabetic's favorite, cowboy cookies. Yes, it isn't the holidays without a diabetic coma from cowboy cookies.
I did wake up around 8am this morning but it took almost an hour for me to get the gumption to get out of bed. Lucy kept me up most of the night wanting to get under the blanket to keep warm. It was quite cold last night. At one time it went down to 27F. I think the furnace went on about three times and it was a pleasant night really. 

Well, I need to go get the laundry finished and then pass out of the couch and watch some Netflix for a couple of hours. So y'all stay safe, wear a mask and have a magical day.

Cross Road

 Hi everybody. It's been a while since you heard from me but I've been doing a lot of thinking and hemming and hawing. I'm thinking of quitting my blog but something inside says keep going. 

I don't know if I'm just so tired from Lupus all the time or I'm just running out of ideas to write about. Goddess only knows how hard it's been for me lately. 

So I'm going to take a week off and really think about whether I should continue. By next Tuesday I will let all y'all know of what I have decided. Until then, have a happy Thanksgiving and please wear a mask.
